Beet and Feta Cheese Salad

Let me start by saying that I love beets! I like them raw in salads, roasted, boiled and pretty much any way! There are so many interesting things you can do with beets and they really are not that hard to prepare. The only downfall is they make you pee red! (I know…so inappropriate for a food blog but it is the truth people! Do not be alarmed!) They do take a long time to cook, but they are very simple if you are looking for a nice side dish like this one! We paired this with a grilled steak and simple green salad for dinner and it was delicious!

Beet and Goat Cheese Salad 
Serves 2

3-4 small beets
Feta Cheese
Olive Oil
Salt & Pepper

Chop the leafy greens off your beets and discard. (These actually are really delicious saved and sauteed as a side dish as well). Do not peel your beets! Boil them for approximately 45-50 minutes, or until tender when poked with a fork. Strain and run cold water over the beets until you can handle them.  Under running water, peel the beets with your fingers. (the skin should come right off). Make sure to wash your hands immediately or they will be stained a pink/red colour. Cut in half, then cut each half into thirds. Crumble your desired amount of feta on top of the beets, drizzle with olive oil and season with salt and pepper. You can also add some white balsamic vinegar if desired to add a nice touch.

Serve on the side of your favourite meat dish and enjoy!
